With a background of Michellin star dining and high end brasserie, Ultan Cooke hails from Galway and studied at the National University of Ireland, Galway. He started his culinary training in Galway. He later moved to London where he worked for John Torode's Smiths of Smithfield, rising to head chef. He worked at Aniar in the period 2013-2015 where he was awarded a Michelin star.

For me, it all started with a tuna sandwich. There was a time (pre-mortgage and pre-children) that I lived just round the corner from Anton's and was as comfortable there as in my own dining room. Anton's has been deservedly rewarded with many years of success on Father Griffin Road. Simple food and excellent value for money explains why it has so many regular customers, and has been part of the neighbourhood's life for so long. It is a mighty achievement for a modestly sized restaurant that is always busy and bustling. This little cafe is big on taste. The formula is simple and has stood the test of time, unpretentious and uncomplicated cooking that has charmed customers year after year.

There are two types of cholesterol, LDL and HDL. In simple terms, LDL is considered the ‘bad’ cholesterol. LDL carries cholesterol from your liver to the cells that need it, and if there is too much cholesterol for the cells to use, it can build up as plaque on the artery walls. This can contribute to heart disease or even stroke. VLDL (very low density lipoproteins) is similar to LDL in that it contains mostly fat and carries another type of fat, triglycerides, in the blood. Excess calories, alcohol, or sugar in your body are converted into triglycerides and stored in fat cells throughout your body.

I’m lucky enough to work from home, that is when I’m not being blasted by Atlantic gales, or lashed with rain on a site as I’m taking measurements and photographs in preparation for starting a garden design. As anyone whose office is in their home will tell you, this has upsides and downsides. One of the upsides is being able to snatch five or ten minutes in the garden at lunchtime if the weather is at all favourable. Today I had a chance to do just that, and it set me up for the rest of the afternoon. The sky was blue, the bright orange nasturtiums were blazing cheerfully along the fence and I could feel a soft breeze coming in from the coast – it was so refreshing and such a good way to clear the head.
