To my mind, there are three levels of food in Irish pubs. At one end is the traditional pub, where your only dining decision is whether to have the cheese and onion or salt and vinegar. And then there is proper pub grub, comforting soups, tasty sandwiches, and old favourites like bangers and mash or lasagne, usually in overly generous portions. At the other extreme of the scale are the ones who take themselves very seriously, where you can expect such delights as 'roasted marrow bones with curried clams in a grilled octopus reduction'.

Schools around the country have just finished up for the summer holidays and many parents have been in a state of panic. This is not my first summer juggling working from home with looking after young children who would be in school during weekday mornings, giving me an opportunity to get some work done. As any parent knows, it is difficult to get anything done when young children are at home. They need to be entertained, looked after, and don't care for deadlines while you, on the other hand, just need to get the job done.

Are you watching the football? France, the hosts are through to the last 16, and are looking good. When I think of France, I think of their favourite ingredient, onions. Onions are a much underrated ingredient in the kitchen, but are so important to our health and overall well-being, as well as being a cheap and tasty vegetable.
There are so many different uses for the common onion in cooking, my personal favourite is just fried onions with steak, or deep fried onion rings in a buttermilk batter. They flavour most sauces, soups and stews and many dishes, but here are a few of my favourite onion recipes.

Supermac's continues the charge to end the race to the bottom for fast food in Ireland, by continuing to take the public's need for transparency and provenance into account.
Supermac’s is Ireland's largest indigenous fast food restaurant group with a policy of continued expansion and growth. While many similar restaurants largely stick to the menu of burgers and fries, Supermac's retains its edge and grows by diversifying and constantly updating its offerings. The first Supermac’s opened its door in 1978 on Main Street, Ballinasloe, Co Galway. Since that first opening, Supermac’s has grown steadily, and its restaurants have become a firm fixture in towns and cities around Ireland. There is always one nearby when you have a hankering for a Mighty Mac, even on the Aran Islands. Last year Supermac’s opened eight new restaurants throughout Ireland as part of its expansion plans, including Tipperary, Drogheda, Clonshaugh, and Ballacolla. The business is also involved in more than 100 community initiatives and sponsorships around Ireland.
