Eggs — it’s the way you cook them

Thu, Mar 31, 2016

Mention cholesterol and the first food that springs to mind is eggs. Eggs are a much criticised food; however it seems like this criticism was misplaced as it is saturated fat that is the greatest culprit in raising blood cholesterol. The confusion occurred as eggs do contain dietary cholesterol, but this seems to have little or no effect on blood cholesterol.

Far from being a dietary no-no, eggs are a versatile, nutritious, and cheap food. An average egg contains approximately 80 calories, it is a good source of protein and vitamins A, B, D, and E; it will also provide you with 100 per cent of your daily selenium requirements, as well as containing iron and zinc. Although it does contain fat, about two thirds of this fat is healthy unsaturated fat.

Holy Guacamole

Thu, Mar 24, 2016

Famously, USA Presidential hopeful, Donald Trump, is no fan of anything originating from Mexico. We in Ireland, however, feel differently about this. Mexican food, one of the biggest food trends of the last decade, shows no signs of slowing down here just yet. Just a few short years ago we got what passes for Mexican food from a yellow box in the supermarket. The finished product often appeared to have already been eaten by someone else. If you attempted to make your own, shopping for chili peppers was an adventure, avocados were an oddity and tortillas were totally out of the question. Latin-American foods such as nachos, chips and salsa, fajitas, quesadillas, burritos and beans are now an everyday sight on the dinner tables of Ireland and have become as common place as bacon and cabbage.

A walk in the Park

Thu, Mar 03, 2016

In the centre of the city, perched on a bustling one way street, the much loved Park House Hotel gives out good vibes from the moment you enter the door. Located on Forster Street, an area of the city that shows signs of getting a new lease of life and already has a lot of popular, new, eateries within wine-spitting distance, Park House first opened in 1975. This is a hotel with a difference, built on nostalgia. Attentive staff in waistcoats and rooms with warm decor all send out the right messages to arriving guests. The bright, comfortably furnished, lobby, is a pleasure for both business and leisure guests to check in, thanks to the efficiency and helpfulness of friendly receptionists who explain the hotel's amenities and make everyone feel at home. Good food is a highlight of a stay at this pleasant hotel, and it is obviously appreciated by local diners too, as the restaurant and bar tables are likely to be fully occupied most evenings.

I was recently invited to a tasting of the new menu in the Canal Gastro Bar and Bistro, Shearwater Hotel, Ballinasloe. On entering the lobby of the hotel one cannot help but be impressed.
