The Easter Rising on Monday April 24 1916, not only took the British authorities by surprise but also the general population of Ireland. In many places, including the town of Galway, the news that fighting had broken out in Dublin was greeted with amazement, and disbelief. Remember World War I was raging at the time. The Battle of Verdun, which was to continue until December with horrendous casualties, was at a critical stage. Its progress was extensively covered in all newspapers. Furthermore, as a result of an intensive recruiting campaign in both the town and county, there was barely a home in Galway that was not affected by the war. Young men in their thousands joined the British armed forces to defend their homeland, to protect the women of Belgium, for a sense of adventure and a decent wage; and in the words of the Irish Parliamentary Party, ‘ to win freedom for Ireland’.

Following the news that Sackville Street (O’Connell Street) in Dublin was in flames, came the more disturbing news that rebels were active in Clarinbridge and the Athenry area, barely 30 miles from Galway. A massive public meeting was called on Wednesday April 26 in the Town Hall on how best Galway could protect its citizens and businesses from these ‘disaffected fanatics”.

I am often asked whether drinking organic wines will stop certain reactions like redness of the face or nasty headaches. These are some of the reactions that certain people get when drinking wine and it is not very pleasant I’m sure. First of all, the theory: ‘organic wines’ have to be made from 100 per cent organic grapes. This is important as if you see a label that says ‘made from organic grapes’ this may mean that only 70 per cent or more organically grown grapes were used in the making of the wine. Organic wines are grown without any manmade pesticides or fertilisers. Historically there were tons and tons of this stuff used, and there are legendary tales from the wine regions about fertiliser salesmen who became very wealthy unloading disgraceful amounts of this stuff with sales pitches where they told each grape grower how their neighbour was using so many tons per hectare, etc. Organic wineries do not add bags of oak chips to add flavour and they use only a very basic and traditional method for making the wine.

This week, I want to cover several smaller bits of news and suggestions for places to visit. I recently found a great place to buy free range eggs and the method of payment is definitely a novel one. Just outside the front door of his house, ‘The Egg Man’ has a crate of fresh newly laid eggs each day. You open the box, select your quantity of eggs (which are wonderfully ungraded, so you can choose massive ones if available), you then calculate the cost at €1.50 per half dozen and put the money in the letterbox. It is called an “honesty box”, and does not give change! The yolks are deep reddish/gold and they taste great, they are also wonderful for cooking. If you want to call to him, take the road across from the water tower in Clarinbridge, drive past Walsh’s Crane Hire and after about one mile on the right hand side you will see a sign outside a bungalow ‘Free Range Eggs’. The Egg Man has also launched a delivery service and guarantees 20 per cent cheaper than retail prices. Call (087) 7682464.

Currying favour

Curry is one of the most traditional English dishes dating back to the East India Trading Company. Curry may be delicious when made well, but Indian food it is not. Now the spices and their combinations used in curry are indeed very much Indian, but in India they tend to be fresh and far more fragrant than what we see in Ireland. The name curry originated from the word kari, which means spiced sauce.
