Add a little spice to your Thursday evenings with this delicious smoky chorizo mac 'n' cheese recipe made with chorizo, chili paste, and smoked paprika and filled with stretchy mozzarella and cheddar cheese.

This spicy twist on the classic mac 'n' cheese meal is packed full of flavour. The ingredients you will need are 1tbsp olive oil, 200g chorizo, 1 sliced onion, 1 crushed garlic clove, 2 tsp paprika, 1-2 tbsp chili paste, 1 tsp coriander, 400g chopped tomatoes, ½ tbsp light brown sugar, 400g mixed beans, and 400g macaroni pasta. And for the cheese sauce, 50g butter, 50g flour, 2 tsp English mustard, 1l semi skimmed milk, 250g mature cheddar, and 100g grated mozzarella.

In 2004, using milk from her partner Haske’s goats, she started making Killeen Farmhouse Cheese on their 50-acre farm near Portumna, Co. Galway. The main Killeen Farmhouse Cheese production is a semi-hard goats’ cheese Gouda, made from pasteurised milk and traditional rennet and available plain or with fenugreek.

On a country walk today the hedgerows are frothy with the prettiest of white blossom – up close it’s like miniature cherry blossom, and in fact it shares the same genus as cherry, Prunus. It’s our native Prunus Spinosa, or blackthorn, whose wood was traditionally used to make shillelaghs. I remember miniature versions of these varnished and sold as souvenirs to spendy tourists, but the shillelagh, Google tells me, was in former times used to settle disputes ‘in a gentlemanly manner’, and modern students of self defence practice its use as a martial art. Which probably says a lot about where we are as a nation when you think about it. But I digress.

An article that appeared in The Irish Times on January 7, 1861, was lifted from the Galway Press and started as follows: “Twenty years ago, this fishing village, for which outdoor relief is now deemed necessary, was the greatest source of profit and employment to the people of Galway. It was the wealth producing quarter of the town, and not alone the town of Galway, but many parts of the interior of Ireland felt the benefit of the successful industry of the Claddagh fishermen. The harvest fishing season, which began in August and ended in November, produced a very large accession of wealth to the country. The number of cadgers leaving the town for the interior averaged about 150 daily, and whilst these peripatetic dealers in fish were thus numerously employed, the foremost merchants we had were occupied in filling their stores with herrings, and even the Fishery Board on some occasions were known to barrel large quantities. So abundant frequently was the take that all the cargoes of salt provided by the importers of that article did not suffice, and it had to be brought overland from Limerick and other places.”
