A lot of the hotels in Galway can be divided into two types. The first kind was built in recent years, a result of the economic boom, largely run by professional management companies whose brief was to merely keep the business afloat and get 'heads in beds'. Flannery's is the other sort of Galway hotel. It is part of the landscape and the fabric of life in the city east area, providing employment and welcoming guests from Ireland and many parts of the world since it first opened in 1969.

Running to a meeting in BT’s last week, I tried to dash past the lingerie department, but to quote the Clash, I had an “If I go with there be trouble? If I stay will it be double?” moment. I stayed. This is a traditional Italian dish from Lazio in the south of Italy. It is simple and easy to make. This is very convenient if you happen to have cooked ham left over from dinner the day before; no need to sauté it on the pan if this is the case. Simply warm the ham and add with the cream and other ingredients for a super quick dish. I like to add mushrooms for variety but you may choose to omit them. For a low GI diet you can substitute milk for cream.

Over the last few years Artisan in Quay Street has gradually been building a name for great food, and now with the recent news that it is the regional winner of the Sunday Independent Life magazine Best Restaurant in Galway award the restaurant can be proud of its efforts. It was one of the first restaurants to do some serious pairing of wines with all the courses and I simply cannot understand why every restaurant does not do so. It must surely increase wine sales and it certainly makes it easier for the customers to decide.
