The tarte tatin gets a glow-up: culinary expert adds to TikTok trend taking over dinner

A viral TikTok chef has been posting easy one-pot dinners with a twist, turning everyday classics into tarte tatin.

Tarte tatins are usually sweet desserts which are popular in France, but this TikTok chef is changing the way we eat them, creating savoury meals that are easy to make in one pan, a new take on this dish that's actually simple and tasty.

He first makes a toad-in-the-hole inspired tatin, cooking down white onions and frying sausages before adding pastry on top, then cooking it under the grill until golden and crispy.

Culinary expert and Recipe Developer at meal-kit delivery service HelloFresh Ireland, Reema Dutta Gupta, shows more ways to make easy midweek meals by making a tatin.

Traditional tarte tatins look impressive but tend to be simple, especially when using ready-made puff pastry, with caramelised vegetables topped in puff pastry. Reema tells us her favourite traditional style:

"I start by caramelising some leeks in a pan, cutting them into small cylinders and placing them face down so they get a nice crust. To caramelise them, just add some butter and a little sugar to the bottom of the pan, and some fresh thyme to taste.

“Place the pan in the oven for 30 to 45 minutes to gently cook, then place the puff pastry on top and cook for a further 30 minutes,” she explains. “When your tart is golden it's ready to flip and plate; you could pair this with some soft cheese or a nice onion gravy."

However, you can make a more modern twist that might appeal to the whole family, by recreating her pizza-style tatin:

"For my pizza-inspired tatin, start by cooking some pepperoni in a pan, then add some dollops of tinned chopped tomatoes, then sprinkle some cheese on top. Simply add the puff pastry on top and cook in the oven for about 30 minutes. Then flip and plate, add some parmesan cheese and hot honey to garnish."
