Prep: 10 minutes
Cook: 40 minutes
Serves: four
Ingredients
1kg Nanna Tate Potatoes (use the smaller ones from the pack )
Olive oil & sea salt (for air frying )
For the dressing
3 tbsp olive oil
1 tsp sea salt
20g fresh lemon thyme, chopped
20g fresh sage, chopped
5g fresh mint, chopped
Juice of half a lemon
For the whipped feta dip
200g feta
3 tbsp natural yogurt
1 garlic clove, peeled and crushed
1 tbsp chopped fresh basil or chives
0.5 tsp smoked paprika (plus extra to serve )
1 tbsp extra-virgin olive oil
Method
Place each potato between two wooden spoon handles. Slice across the potato in thin intervals, the spoon handles stop you from cutting all the way through. Rinse with cold water and pat dry.
Drizzle the potatoes with olive oil and a sprinkle of sea salt. Air fry at 180°C for 35 minutes.
Mix all the dressing ingredients together in a bowl and set aside.
Remove the potatoes from the air fryer and gently toss with half the herby dressing, get some in between the slices. Return to the air fryer for 5-7 minutes until golden and crisp.
Blend all dip ingredients until smooth and fluffy, you’re aiming for the texture of thick mayo.
Drizzle over the remaining herby dressing, dust with a little extra smoked paprika, and serve alongside your whipped feta dip.
