Suzanne Jackson Launches Eyre Cocktail Bar

In association with The Skeff Late Bar & Kitchen

Over 200 people attended the official launch of Eyre Cocktail Bar with blogger and creator of the SueSueMe brand Suzanne Jackson on Friday night. The global digital influencer also unveiled SoSipMe her signature cocktail which appears on our new cocktail menu – it’s a blend of vodka, crème de menthe and kiwi liquer and crushed ice.

Did you know the name Eyre Cocktail Bar was chose by Sinead Jordon, who won our public competition to find a name. Sinead has won a prize package including a weekend for two in our sister hotel, The Prince of Wales in Athlone. We hope Sinead and her husband Peter enjoy it!

The SoSueMe brand founder was warm, bubbly and super friendly as she spoke to each of our customers and posed for photos at our papparazzi backdrop and selfies at our official selfie spot.

"I am delighted to be in Galway, one of my favourite places to visit. I love cocktails and was super excited to have my own signature cocktail on the Eyre Cocktail Bar menu.

She also took questions from customers and was asked by one customer what tips she would give to budding bloggers.

“Work hard, be consistent, be true to your own passions and keep going. It’s hard work and it requires you to blog about your passions not simply about what is trending. This will serve you better in the long-term.”

Suzanne loved her SoSipMe cocktail which she made alongside Johnny C, our master mixologist.

It was lovely to see the Into The West Blogger Network at the launch party. These guys do valuable work promoting the best of what Galway has to offer locals and visitors alike.
