Popular Galway pizzeria, Dough Bros, ranked 79th in top 100 pizzerias in the world

The ever popular Dough Bros pizzeria on Middle St. was ranked 79th in the top 100 pizzerias in the world by 50 Top Pizza World 2022, in its first ever review of top 100 restaurants.

Dough Bros, founded in 2013 by brothers Eugene and Ronan Greaney, initially located in a food truck is now a permanently busy restaurant on Middle St and with a second location in O’Connells pub in Eyre Square.

Speaking on the win, Eugene said, “when we first started out, the initial business plan was to work the wider Galway scene. We wanted to revolutionise pizza in Ireland and show people what pizza could be by combining Neopolitan pizza techniques and Irish ingredients. For us to be in the top 100 pizzerias 9 years on, is just surreal.”

“We quickly realised when we started travelling overseas that with the great ingredients we have in Ireland, that if we really focused and worked hard then why wouldn’t one of the best pizzerias in the world be in the west coast of Ireland?”

Ronan and Eugene travelled to Naples for the 50 Top Pizza World event accompanied by their mother Eileen, who is the general manager for Dough Bros and their sister, Ailise who has worked for them since she was 15. This was a return to the city for Ronan, who had studied traditional Neopolitan pizza making in the Associazione Verace Pizza Napoletana (AVPN ), a governing body in Naples who strive to protect traditional pizza practices the return to the city held another level of significance.

“We visited the restaurant in Naples that Ronan worked in while training with the AVPN and to be there and to feel like we were on a level with those guys was just incredible,” explained Eugene.

For Eugene, the fact that Dough Bros is one of only three pizzerias listed from the UK and Ireland, “felt really significant,” and will drive the pair to continue to make delicious food with quality local ingredients. With a reported 63,000 pizzerias in Italy alone, the fact that an Irish-based restaurant has ranked in the top 100 is a massive achievement.

“This was the dream for us. We set our standards high but did we really think, when we started that we’d be in the best of the world? No,” laughed Eugene.

Following a full renovation, the indoor dining of their Middle St. restaurant is now open and the brothers are focusing on expanding their online production and a takeaway unit. For further details, visit thedoughbros.ie
