Foraging for Dinner event celebrates wild, local food

A special event taking place in Artisan restaurant this evening (Thursday ) will explore the wild and foraged food available in Galway.

Artisan, in association with Marques De Riscal wines and west coast forager Brian Gannon, will present a five-course menu of locally foraged and wild ingredients at the event, along with wines from the renowned Marques De Riscal winery.

The Foraging for Dinner evening takes place at 7pm.

“At Artisan we are on a journey to introduce diners to the delights of the wild foods we have on our doorstep,” said Matt Skeffington, owner of Artisan. “The evening’s dishes have been carefully planned with seasonal wild food along with insight from Brian Gannon. We are looking forward to an exciting and adventurous evening.”

According to Brian Gannon, Galway offers a cornucopia of foraged ingredients, from the sea to the local woodlands.

“Our local sea waters are full of seaweeds that are incredibly rich in nutrients versatile to cook with and very tasty to eat,” he said. “On our seashores we’ve plants like sea spinach, radish, marsh and rock samphire, arrow­grass, monk’s beard, etc, all growing unspoilt, wild, and free just waiting to be discovered. Our local woodlands too are full of sumptuous edible foods such as seasonal wild mushrooms, Alexanders, wood sorrel, wild strawberries, blueberries, and all of these glorious foods are free for all of us to discover, cook with, and to eat and enjoy. The key to unlocking the door to these wild edible beauties is simply a matter of knowing where to find them, learning how to recognise them correctly and understanding how to enjoy them best. The challenge and the bounty is all yours to enjoy and it’s completely free.”

Artisan Restaurant is located in Galway’s Latin Quarter at Number 2 Quay Street. A new summer menu is now available with many dishes featuring ingredients by Brian Gannon.
