Historical food feast at Waterford Castle

A mouth-watering historical food feast with award-winning chef Michael Quinn will kick-off the Waterford Harvest Festival at Waterford Castle Hotel next Friday, September 10.

Guests will be treated to an evening of gastronomic delights in the castle’s Munster Room restaurant with a menu centred around the style of Princess d’Ardia Caracciola.

Born Mary Purcell-Fitzgerald (1908-1968 ), she was the last member of the Fitzgerald family to live in Waterford Castle. Mr Quinn, head chef at the hotel, has taken extensive research into the menu design and creation.

Dishes on the evening will include old classics such as Consommé Julienne and Eggs Rossini, an old recipe named after the Italian composer Gioacchino Rossine, who was famous for his love of food. Other tantalising dishes include crystallised greengages, tangerine water ices, creamed sorrel and quail encroute.

Guests will be brought back in time and given a taste of food and hospitality by a noted personality from the local area, celebrating the castle’s 800 year history.

Michael Quinn’s philosophy on food is simple. Take fresh, organic, locally sourced and seasonal ingredients and cook them simply to retain their true taste.
