Chef O’Neill has become recognised for his culinary excellence in recent times. In February, he worked with Ruth Wood-Martin, head of nutrition for the IRFU, in providing for the nutritional needs for Joe Schmidt and the Irish senior rugby team. Plus, last June Eoin prepared a delicious local dish - pickled Lough Ree brown trout with new potatoes and Carty’s ham salad - for TV3’s Alan Hughes.
