Ask the chef

This week I got a question from Edel in Claremorris. She wants to know how to stop her rice from sticking. Great question Edel, and it is one that I am asked regularly.

There are some 1,000 different types of rice, but the main ones that we are familiar with in Ireland are long grain and basmati.

The solution to the problem is really simple, cook the rice in double the amount of boiling water, until tender (about 12-15 minutes ).

Drain the rice in a colander or a sieve, and then pour boiling water from the kettle over it. This removes the starch, which makes the rice sticky.

If you are cooking rice in advance, cool it down by washing the starch off with cold water.

When I cook Basmati rice, I wash it with cold water for a minute to remove the starch before I cook it, which also stops it from going sticky.

Thanks for the question Edel and I hope that I have helped with your query.
