Chocolate biscuit cake

It is Mother’s Day this Sunday. Thousands of people around the county will be looking for a special present for their mother. Why not really show her how much you love her by making a chocolate cake for her?

Can’t cook? No problem, this is a fool proof easy recipe that does not even need cooking, and if you make the effort, I am sure she will be impressed.

This recipe is also very easy on the pocket, which is always a plus these days, and when you have all the ingredients ready, it should only take you 10 minutes to prepare (don’t tell mum ).

Ingredients

4oz butter

3 tablespoons of syrup

5oz white chocolate

1 packet of Maltesers chocolates

1 drop of Tia Maria

A few mini marshmallows

3/4 of a packet of chocolate digestive biscuits

1/2 tin of condensed milk

Method

Firstly, melt the butter and add the syrup.

Chop the white chocolate roughly and mix it in with the Maltesers and the marshmallows.

Break up the chocolate digestive biscuits and add them with the condensed milk and the drop of Tia Maria.

Basically, you just mix all the ingredients together.

Line an eight inch/23cm square cake tin with a double layer of cling film or parchment paper.

Pour the chocolate and biscuit mixture into the lined cake tin.

Transfer to the fridge and allow it to set.

Cut into squares and drizzle with some melted white chocolate if desired.

When you cut it, it will have a lovely marbled effect and will taste divine.

No matter what age your mother is, she will be amazed by your skill, and hey, isn’t every mother deserving of a quality day at least once a year?

I would like to thank my own mother in law for this tried and trusted recipe and take the opportunity to wish her, and my own mother, a wonderful Mother’s Day.

If you would like a recipe for anything at all, contact me at [email protected] and I will do my best to accommodate you.

Next week, as St Patrick’s Day approaches I will be sharing a traditional Irish stew recipe with you, until then, happy cooking.
