This specially crafted pizza features Bolognese sauce with slow-cooked fennel sausage, smoked Gubbeen cheese béchamel sauce from West Cork, foraged and pickled wild ramsons, cold-pressed Irish rapeseed oil, and sprinkled with Achill Island sea salt.JP McMahon first experienced a Bolognese dish in the 1980s at Chez Hans in Tipperary—an influential moment he credits in his book, An Irish Food Story, as the beginning of his culinary journey. Jp, says, “Bolognese sauce has a special place in my heart. From the very first time I had it when I was young, it retains a magical aspect in my culinary imagination. It's great to collaborate with the Dough Bros. They're one of the best pizza makers in Ireland, and they showcase wonderful Irish and Italian products.
