The Hawthorn by Galway Bay, Galway’s newest five-star hotel, has brought together a food and beverage team rich with international experience and some of Ireland’s most respected hospitality talent to shape its culinary identity for when it opens its doors this May.

Previously known as the Fisherman, owners, the O'Malley family, have decided to take the famous restaurant in a new direction, so they closed for a month-long overhaul and renovation and re-opened as Wilde's.
