Adventurous dining at The Salthill Hotel

That the Salthill Hotel has only recently been awarded four star status came as a surprise to me. The lofty foyer and comfortable reception would not be out of place in Kensington. Any weddings or events I have attended there have always been to a very high standard. Overlooking the Promenade, with views of Galway Bay and the Clare Hills, this elegant hotel features an exceptional leisure centre. But the official announcement was granted by Fáilte Ireland, that the Salthill Hotel has achieved the four star status, only on February 12 2015. This accomplishment is testament to the hard work of the staff, coupled with the substantial investment by the Byrne family in the property in the last few years.

Athlone IT student in final of student chef comp

Fourteen of Ireland’s most talented student chefs have won a place in the 2013 Knorr Student Chef of the Year competition. Representing culinary colleges and institutes from across Ireland the student chef finalists will travel to IT Tralee on Wednesday February 27 to battle it out for the title of Best Student Chef in Ireland’s premier student chef competition, including James Gumley from AIT.

Christmas Pudding

It’s hard to believe but Christmas is less than 2 months away. There is so much to do around Christmas, presents to be bought, friends and family coming home and Christmas dinner to prepare, so now is the perfect time to get a head start. Traditionally, Christmas pudding was made four or five weeks before the big day to help develop the rich distinctive flavours. I have tried many versions and recipes over the years, but this is my favourite. I got this from my grandmother the first Christmas after I had qualified as a chef, and it is as good now as it was then.

Battle of the chefs on November 16
