Ask the chef

Since I started this column a few months ago, I have had a few culinary questions e-mailed to me, and I have decided to start up a new feature on the food and wine page, Ask The Chef. If you have a chef question that you would like an answer to, no matter how trivial, please e-mail me on [email protected] and I will endeavour to help you.

On the butcher’s block

Seamus Bracken is a great man to discuss the preparation and delivery of a great steak, particularly if it’s a well cooked rib-eye which he describes as “pure heaven” with just the right amount of fat.. “It’s an absolutely gorgeous tender piece of meat if it’s been cooked beautifully. And, it’s a piece I would drive miles to appreciate.”

Room outside at The Boutique Kitchen

Whoever said that money can’t buy happiness simply did not know where to go shopping. The women of Galway know that happiness is available to purchase in sizes small, medium, or large at Born in Newtownsmith, not least of all because of The Boutique Kitchen, the in-store cafe where you can fortify yourself for a day's shopping with breakfast, beverages, and brownies without needing to leave this shopping haven.

Lunch at The g

The last few years seem to have seen an explosion in the market for eating out on Sundays. Once upon a time it was not considered acceptable to make others work on a Sunday, but I think that day is past (for good or ill), Perhaps it is because so many people do not get a chance to sit down together during the week and they feel that their treat is to eat out together on Sunday. For some it is absolutely every Sunday, for others it is the occasional treat. I often ask restaurant and hotel owners what their business is like on Sundays, and I am regularly astounded by the number of covers they do on a Sunday, it is enormous. Often it is an excuse to bring together extended family for a meal out without breaking the bank, and most establishments make particular efforts to see that children are catered for, thus making it less stressful on parents.

Finnerty’s champion craft butchers and Corry’s Loughrea

Finnerty’s butchers, which is located on the ground floor of the Eyre Square Shopping Centre and in Oughterard, has just scooped a top award at the All Ireland Craft Butcher Product competitions. It won supreme champion in the sausages and puddings section, quite an achievement when you think that there are about 500 butchers in the association and about 300 in the competition. Nevin Maguire was the main judge at the event so we can assume that the winners were all pretty impressive. I had often passed by the shop but never shopped there, so I decided to call in and try some of the award winning products. The main shop is in Oughterard and it has been supplying locally sourced meat for the last 50 years and supplies many of the main Connemara hotels like the Abbeyglen, Renvyle House, and Cashel House.

The spud could just be the thing to ward off winter sniffles

Wilson’s Country Irish Potatoes has conducted a straw poll survey on the Irish streets to see if the spud is the family favourite. On average Irish people confirmed they eat Irish potatoes just 2.5 times a week as part of their main meal; pasta was the option 1.7 times a week; with rice following shortly behind, just once a week.
