Ginger chicken breasts parcel
4 skinless chicken breasts
2 onions finely chopped
2 cloves garlic crushed
1 tsp ground turmeric
6 cm of fresh root ginger peeled and finely chopped
5 cardamom pods, cracked
2 tbsp light soya sauce
2 tbsp dry sherry or wine (optional )
Put the chicken breasts in a bowl with all of the other ingredients. Cover and put in the fridge for a few hours, turning the chicken a couple of times. Take enough tin foil to roughly line a baking dish allowing ample to fold over and make a sealed parcel.
Place the chicken in a single layer and pour over all the marinade. Bake in a pre-heated oven at 200C/ Gas 6 for 35 minutes. Serve with mashed potatoes or rice.
