Wine of the week – Sábalo Organic White 2020

Antonia Dominguez was born in Jerez, Spain, famed for its sherry production, and was raised in Ireland. She is a holder of the WSET Level 4 diploma in wines and spirits and is currently a student on the prestigious Masters of Wine programme, the only MW student in Ireland. Her expertise stretches far beyond Spanish wines, extending to all notable wine regions of the world. Under her meticulous and quality-orientated selection process, she sources stand-out wines at a range of price points and styles, representing wineries from both undiscovered and classic regions. Her selection is based on offering unique and expressive wines with personality, and on bringing Irish consumers as close as possible to an authentic wine experience.

Sábalo has just been awarded Gold Medal at the 2021 International Organic Wine Awards. An ideal seafood partner, it is a refined, organic white wine made from the Palomino Fino grape variety, grown in the famed Jerez region. Palomino is a grape typically associated with the production of dry sherries long-admired by wine enthusiasts, but the style of this white wine could not be further from a dry sherry.

Fresh, fruity, and floral, this wine is ample and silky on the palate with orchard fruits and attractive saline notes. The grapes are organically grown on the bright-white albariza soils of the Jerez region, which helps the wine retain its freshness and gives subtle minerality to the wines.

Ideal for accompanying meaty white fish dishes such as pan-fried cod, turbot, John Dory, or monkfish, with capers or sauce vierge. Also perfect with mussels meuniere or pasta vongole.
