'Tis the seasoning

With the Christmas festivities in full swing, Christmas Day is fast approaching. Take the stress out of the day with these seasonal side dishes that are sure to be the perfect accompaniment to your Christmas feast.

Bursting with flavour, this lemon, garlic, and bay roast potatoes recipe is a must-try for your Christmas Day dinner. All you need is one bag of baby potatoes, one garlic bulb cut in half, rapeseed oil, fresh bay leaves, and half a teaspoon of lemon zest.

Halve the baby potatoes and boil with half of the garlic bulb until soft. Coat a baking tray with the oil and transfer the potatoes onto the tray. Season with salt and pepper, place the bay leaves under the potatoes, and add both halves of the garlic to the tray along with the lemon zest. Roast for 40 minutes at 200°C, turning the spuds at the halfway mark and adding an extra dash of oil.

Of course, Christmas dinner would not be complete without stuffing. For this sage and onion stuffing recipe all you need is 50g butter, one tablespoon of oil, one chopped onion, 100g breadcrumbs, and one tablespoon of fresh sage. Simply cook the onion in a pan with the butter and oil until soft. Add to a baking dish and carefully stir in the breadcrumbs. Cook for 40 minutes at 177°C. Et voila!

And finally, to complete your Christmas feast, create a delicious homemade cranberry sauce. Add 100ml orange juice and 100g muscovado sugar to a pan and bring to the boil. Stir in 250g fresh cranberries and simmer for 10 minutes. Leave to cool and serve at room temperature.
