Vegan pancakes

This is an egg and dairy free simple pancake mix that is really tasty.

Ingredients

450g flour

30g sugar

1 teaspoon baking powder

1 teaspoon salt

60mls vegetable oil

½ teaspoon vanilla extract

750ml soy milk

Vegetable oil for frying

Method

You don’t have to use soy milk, you can substitute it for any other non-dairy milk, like almond, etc. In a bowl, combine the flour, sugar, baking powder, and salt. Add the remaining ingredients and whisk until the mixture is smooth. Heat one tablespoon of oil in a non-stick pan over a medium heat. Pour about 60ml of the batter into the pan. Cook the pancake for two minutes each side until lightly golden. Top the pancakes with fresh raspberries or strawberries and maple syrup.
