Sunshine inspired BBQ chicken and avocado tacos the flavoursome treat

Sunshine-inspired BBQ chicken and avocado tacos, vibrant and delicious in colour and taste are a must for a weekend dinner!

The perfect build-your-own style meal packed with zestful flavours and colourful ingredients.

Serves 4-6


2 chicken breasts

100 ml your favourite BBQ sauce

1 knob of ginger, minced

2 cloves garlic, minced

1 tsp ground cumin

60 grams cabbage, shredded

1 lime, juiced

1 tsp olive oil

Small bunch of parsley, chopped

1 mango, diced small

1 red chilli, chopped finely

½ red onion, chopped finely

Small bunch parsley chopped

2 avocadoes, crushed

1 lime, juiced

2 plum tomatoes, diced

1 tsp olive oil


Crème fraiche or sour cream

Hot sauce


Lime wedges


Marinate chicken with BBQ sauce, garlic, ginger, cumin, salt & pepper.

Grill over high heat until thoroughly cooked through. Shred with 2 forks into large pieces.

Mix all the ingredients for the slaw & set aside.

Mix all the ingredients for the mango salsa & set aside.

Mix all the ingredients for the guacamole, season with salt & pepper & set aside.

Warm the tortillas over the grill to slightly blacken, this gives a wonderfully smoky flavour.

Arrange everything in bowls & serve family style. Enjoy!
