250 g watermelon
250 g strawberries
Juice of one lemon
300g Siúcra Sure Set Sugar
Deseed the watermelon by pushing it through a sieve.
Hull and wash the strawberries.
Place in a pan and blend everything using a hand blender
Add the lemon juice and jam sugar.
Boil for three to six minutes or until it thickens into a syrupy consistency.
Pour your jam onto a cold plate and allow to cool for about 15–20 minutes. This will allow the jam to set.
Pour into hot, thoroughly cleaned jars, seal and keep cool.
