Things seem to be looking up for us here in Mayo. What a lovely Bank Holiday weekend we had last week. The weather is great; well it’s not raining every day so that’s a plus. I think a few easy summer dessert recipes are called for this week.

"Summertime, and the living is easy." It’s the start of August, and the weather is typical for  Mayo, but you have to take advantage of the slightest good day and having a barbecue is a great way to meet up with a few friends. Why not invite a few neighbours and friends around this weekend, take the barbecue out from the shed and have a bit of a party?

Spring is in the air, but there is still a bite of cold out there at the minute. This week I have got some simple, but delicious delights that you can whip up very easily that will have everyone at home looking for more.

Valentine’s Day, romance is in the air. The cards and the presents will be exchanged, but will everyone get out for a romantic meal? As Valentine’s has fallen on a Tuesday this year many restaurants are spreading the love over the whole weekend, and Monday and Tuesday, and why not?

It is a cold February morning as I write this column. The sun is coming out now, but it looks like we may have a cold week ahead. Next weekend is Valentine's, and many hearts can be melted with these lovely chocolate recipes that I have decided to share with you.

We have been counting down to this for the last few weeks here on this page, it’s that time of the year again, yes Halloween is Monday night, so this week I have a few more spooky recipes to share with you for the big day. Trick or treating is such a massive thing for the kids, collecting sweets and chocolates from local houses, so each year we have our homemade treats for the children, to vary the collection. Why don’t you try making them yourself and get into the Halloween spirit.

After a summer of mixed weather, we enjoyed the sun we had, Mayo are in yet another final against Dublin, and September has sneaked up on us, so it’s back to reality for most of us in Mayo.

Wow, can you believe that it is almost the middle of August already? Mayo are in yet another football semifinal. We have suddenly arrived slap bang into the middle of the summer; the strawberries in my garden are beginning to redden and the rhubarb is crisp and delicious.

Are you watching the football? France, the hosts are through to the last 16, and are looking good. When I think of France, I think of their favourite ingredient, onions. Onions are a much underrated ingredient in the kitchen, but are so important to our health and overall well-being, as well as being a cheap and tasty vegetable.
