Something special for all the mothers this Mother's Day

Sunday is Mother’s Day, and a time to show her some much-needed appreciation.

Why not show her that you love her by spending a little time in the kitchen creating simple but delicious chocolate dessert treats for her.

How many mothers can resist chocolate, especially on this big day? Here are three fool proof recipes to brighten up your Mother’s Day on Sunday.

Chocolate fudge

The first one is a low-fat chocolate fudge recipe that my wife makes at home. We also make this in the restaurant and it is very popular. It is also so very easy to make. This recipe will make 36 delicious squares.

Ingredients

Low fat cooking spray

175g golden caster sugar

170g can evaporated milk

25g butter

350g dark chocolate (minimum 70 per cent cocoa ) broken into pieces

100g white marshmallows

Method

Spray a seven-inch square cake tin with the low-fat cooking spray.

Put the sugar, evaporated milk and butter into a saucepan and bring to the boil, stirring constantly. Reduce the heat to medium and boil gently for four minutes, stirring all the time.

Add the chocolate and marshmallows to the saucepan, remove from the heat and stir until smooth.

Pour into the prepared tin and leave until it is cold. Stick it in the fridge for two hours to go firm, and then cut it into 36 squares.

How easy was that? And trust me, they are delicious.

Chocolate goo pudding

Choc Goo

Here is a chocolate pudding that is one of my all-time favourites, it is what it sounds like, chocolaty and gooey. This recipe will serve six.

Ingredients

100g dark chocolate (minimum 70 per cent cocoa ) broken into pieces

2 heaped tablespoons of runny honey

2 heaped tablespoons of cocoa powder

2 level teaspoons of cornflour

2 tablespoons of icing sugar for dusting

For the topping

2 large eggs

60g muscovado sugar

2 heaped tablespoons of cocoa powder

Method

Pre-heat the oven to 170C. Then in a small saucepan, gently heat the chocolate, honey, two teaspoons of cocoa powder, cornflour and 200ml water, stirring constantly until the sauce is thick and smooth.

Divide the sauce among six ramekins or heat proof glasses.

In a large bowl, whisk the eggs and sugar together for about five minutes until they become pale, thick and very airy. Sieve in the remaining cocoa powder and fold it in using a large metal spoon so that the air is not lost.

Share the topping among the six ramekins and put them on a baking tray and cook for eight to 10 minutes.

Take them out of the oven and sprinkle them with icing sugar and serve them straight away. What a delicious, gooey, chocolate treat on Mother’s Day.

Chocolate and whiskey dessert

This is another great chocolate based dessert that is great fun to make and tastes even better.

Ingredients

150ml milk

150ml cream

Vanilla essence

175g bitter chocolate (70 per cent cocoa )

50g sieved cocoa powder

Whiskey

Honey

1tsp instant coffee

Method

Heat up the milk, cream, and vanilla in a saucepan and when the mixture is hot (not boiling ), add the chocolate and take it off the heat, but keep stirring until it is rich and glossy.

Add some honey, and add two dessert spoons of whiskey, the coffee, and the cocoa powder and stir. Pour into the serving dishes, place in the fridge to set.

The famous TV chef Jean-Christophe Novelli, does a version of this dessert on his programme, but I can assure you that you do not have to be a top chef to make this.

Follow the instructions and it should take you about five minutes to make and I would make them the night before so that they set nicely in the fridge for Mother’s Day.
