Mary Millea from Tullaroan in Kilkenny and Garrett Byrne from Campagne restaurant at Gashouse Lane in Kilkenny city are centrally involved in a new publishing initiative with the Irish Hospice Foundation (IHF).
It is hoped that a new cookery book entitled Zest will make an ideal gift particularly at Christmas and raise vital funds for hospice care.
Featuring recipes from over 60 leading Irish restaurants and well known chefs, Zest brings people on a gourmet tour of Ireland for a recession proof €20 per book.
Mary Millea heads up the corporate fund-raising function for the IHF and is heavily involved in promoting Zest! A former nurse who worked as a staff nurse in Our Lady’s Hospice, Harold’s Cross after qualifying, Mary joined the IHF in April 2005. She also has many years experience working in public relations and the pharmaceutical industry.
Garrett, the chef/proprietor at Campagne, submitted three recipes for the book. His recipes include a starter of organic beetroot, red onion and feta salad with walnuts. His main course is a roast corn-fed chicken with gratinated semolina, roast artichokes and herb sauce followed by a dessert of raspberry crème brulée.
