Have you been tasked with organising the New Year’s Eve celebrations for your family and friends this year? Here’s an idea…leave the planning to the team at SALT Restaurant & Bar at 163 Upper Salthill and you can concentrate on looking fabulous!
This Sunday night, it’ll be all glamour and glitz at SALT and guests can look forward to a night of fabulous food, live music, amazing cocktails and lots of bubbly to really kick off the celebrations.
There will be prosecco and canapés on arrival, with dinner served between 6pm and 10pm. Michelle Lally will be looking after the entertainment for the night and at midnight, there’ll be a complimentary buffet with bubbly for one and all.
Executive Head Chef Jose Vega has prepared a mouth-watering à-la-carte menu for the evening, with creative dishes to suit all tastes.
For starters, there’s a Goats’ Cheese Cheesecake with pear jelly, pesto, pickled beetroot and leaves, or perhaps the SALT-Style Caesar Salad will take your fancy (bread tuile, quail egg, tempura anchovy, chicken wing lollipops, parmesan shavings and romaine lettuce ). The fish-lovers are also in for a treat, with a Duo of Seatrout, comprising cured and smoked belly, honey and soya-glazed fillet, served with a chorizo, broad bean and herb.
The main courses are equally appealing, with Roasted Poussin served with hay-smoked carrots, rosemary confit jersey royal and tarragon jus; or Pavé of Sirloin with oxtail ravioli, pomme anna, asparagus and bordelaise sauce. The vegetarian option for New Year’s Eve at SALT is Verdures Con Chili (ricotta-stuffed picadillos, tomato and chipotle sauce, kidney beans, crispy taco, guacamole and sour cream ); while the fish dish is Pan-Fried Fillet of Brill with batter scraps, pea and mint purée, pomme croquette and tartare sauce beurre blanc.
For dessert, there’s a special treat with the Four Seasons Selection (Winter Log, Spring Collins, Summer Sorbet and Autumn Pavlova ). And of course, the Christmas Cocktail Menu will be on offer throughout the night, with a fantastic selection of creative cocktails to suit all palates.
