Healthy breakfast options

The team at Evergreen Healthfoods are constantly being asked for healthy, nutritious, and tasty breakfast ideas. Here is one of their favourites — homemade muesli topped with vegan yoghurt.

Homemade vegan yogurt

Ingredients:

100g Evergreen brazil nuts (you can use any nut of your choice )

1 banana

3 Terranova probiotic complex capsules

3 Evergreen dates (you can use fewer or more dates depending on your sweet tooth )

Splash of water

Method:

Start by soaking your brazil nuts and dates for as long as you can, overnight preferably. Then add to a blender with your other ingredients. Add a little bit of water at a time just to be sure you have the right consistency, you do not want it too watery. Blend until smooth.

When you have a nice texture, and are happy with it, convert to a jar and cover with cheesecloth, or make do with kitchen paper. Leave at room temperature to ferment. Then after four hours or so put in fridge overnight. The next day you should be left with a nice, creamy, nutty, yogurt.

Muesli

Ingredients:

4 cups of rolled oats (use a gluten free option if you wish )

2 cups of rice flakes

2 cups of rye flakes or quinoa flakes

1/2 cups of sunflower seeds

1/2 cup of pumpkin seeds

1/4 cup of flaxseed

1/2 cup of flaked almonds or chopped walnuts

1/2 cup of raisins or unsweetened cranberries

1/2 cup of unsulphured apricots

1/2 cup of coconut flakes (optional )

1 teaspoon of cinnamon

Additional ingredients (if preparing bircher muesli ):

1/2 cup of apple juice

1/2 to 1 cup of water

Squeezed lemon juice

1 apple cored and grated

Handful of mixed berries

Method:

To make traditional muesli, mix all of the listed ingredients together and store in an air tight container.

To prepare bircher muesli, place two cups of the muesli mixture in a bowl. Pour in the apple juice, water, and lemon juice and mix. Cover and leave to soak for 30 minutes. Soaked grains are much easier to digest.

When the bircher muesli is ready to serve, grate the apple on top of the muesli and mix well. Serve topped with your delicious homemade vegan yoghurt and some fresh fruit such as mixed berries.
