Award-winning chef joins Ballindooley Stores

Freshly cooked food to take away for busy people on the go is what Ballindooley Stores' All Ireland silver award winning chef and local resident Orla Corcoran prides herself in providing. She joined the shop last month after winning the prestigious top award for her dish at the Connemara Mussel festival in Tullycross.

It was judged by top Irish chef Sally McKenna from the The McKenna Guide and Maureen Ní Chomain author and presenter of cookery programmes on RTE. This was followed by getting the silver medal as the runner-up in the Catex Chef Ireland for the Senior Fish Dish Compitition.

Proprietor Eamon Byrne says he is delighted with the regional and national success of his new chef and doubly delighted that his customers can benefit from the cooking skills of this award winning chef from Castlegar.

Before joining Ballindooley Stores Corcoran worked with a number of top restaurants in the Galway area. She now brings this expertise at producing similar top class nutritious meals, for taking away, by busy commuters, and customers of the shop on the Headford Road, from 7am to 7pm each day.

Due to busy lifestyles so many of us are rushing around and it is often difficult to have a sit-down meal at suitable times when restaurants are open. This can lead to bad eating habits or settling for what is often poorer quality fast food which can, sometimes, be packed with preservatives.

Not so with the delicious and diverse dishes that Corcoran is cooking up for the customers at Ballindooley Stores which are all freshly prepared from natural ingredients with no preservatives.

The tasty chicken meals are made from 100 per cent chicken breast that is breaded in the store's kitchen. The tasty six ounce burgers are all made with 100 per cent Irish beef and like all the meals are at the lowest possible price. The mouth-watering bacon and cabbage meal or turkey and ham dishes are similar to what you would expect to get in any good quality restaurants.

The home-made lasagne, shepherds pie, fish pie, and chicken pie are all freshly made and salmon dishes are among Corcoran's specialities. She also prides herself in the selection of cold deli meals including ham, beef, and chicken which are all cooked fresh and with no preservatives while the coleslaw and potato salads are all prepared daily.

So at a time when fast food can often be food that may be less nutritious and, at times, of a more mass produced nature, the personally prepared meals by award winning chef Orla Corcoran at Ballindooley stores are very different. This is food that is fast, yet fresh, and preservative free. It is a healthy option, varied, and at the right price but with best nutrition for the busy lives that we all now live.
