A Galwegian with a passion for Irish cooking joins the House Hotel

The House Hotel has welcomed a new executive head chef, Padraic Casserly. The 30-year-old is a Galway native from Mervue with a passion for traditional Irish cooking using fresh, local ingredients. Known for his creativity and professionalism, he has been cooking professionally for 15 years and has already received enthusiastic reviews for his food.

Mr Casserly discovered his love of cooking at the Great Southern Hotel where his mother worked. He took up his first kitchen position at the age of 13 and has never wanted to leave the kitchen since. He trained as chef at the Galway-Mayo Institute of Technology where he received a number of culinary awards.

Mr Casserly found inspiration at his roots in Galway and speaks very highly of Pat Conway, his lecturer at GMIT, and Sean Buckley, former head chef of the Radisson Hotel Galway. “These chefs were such an inspiration to me,” he said. “They instilled confidence and knowledge, handled pressure with great poise, and cooked for very large groups — sometimes in the thousands — while still maintaining the highest standards.”

In his new role, Padraic Casserly brings culinary creativity and high standards of wholesome food to the House Hotel. “His new a la carte menu makes the most of local and seasonal ingredients to create regionally inspired dishes that is served in the luxurious surroundings of the House Hotel,” said Niall Dalton, general manager of the hotel.

His signature dish, slow-cooked pork belly, is a perfect example of his style of cooking: 18 hours of careful preparation, full flavours, and traditional Galway ingredients. Casserly aims to deliver a culinary experience on every plate with his authentic cooking flair.

“These great dishes are offered at affordable prices,” Mr Dalton added. “A two-course meal with a cocktail included will cost you only €19.95 per person. The New Year’s Eve dinner package costs €64.95 per person and it includes champagne and canapé reception on arrival, a four-course gourmet meal, live entertainment and dancing till late, raffle and spot prizes, including a chance to win a luxury hotel break.”
