Ten portions a day? Here’s how to make a start

New studies have now suggested that we should be eating 10 portions of fruit and vegetables a day, but how do we incorporate these into our diet? Adding vegetables to breakfast can be a simple way of getting in some of your daily portions.

Make a green juice - juice two apples, 2 stalks of celery, one head of broccoli, a chunk of ginger, a handful of kale, one lemon (skin removed ) and a big chunk of cucumber.

Serve one slice of wholemeal toast topped with two poached eggs, mushrooms and tomatoes lightly pan fried in some coconut oil.

Make an omelette with smoked salmon, spinach, onion and black pepper.

Green smoothie– blend together one Spatone sachet, one kiwi, 2 stalks of celery, a handful of spinach, a 2 inch piece of cucumber, the juice of half a lemon and a quarter of an avocado with 1-2 cups of water.

Juice together one beetroot, two carrots, one apple, a chunk of ginger and the juice of half a lemon. To help maintain energy and healthy iron levels add in a Spatone sachet too.

Poached eggs on oven baked sweet potato toast – Cut a big sweet potato in to slices and lay on to a baking tray. Drizzle with olive oil and bake at 180c for 30-45 minutes. Once cooked, serve as toast with poached eggs.
